Spring is in the air and that means its time to start eating fresh and tasty salads. In Traditional Chinese Medicine, it is believed that the liver begins to “wake up” in the spring and therefore it is beneficial to to eat foods that nourish and support it. This is a great time to do a full body cleanse and eat lots of green foods – which is thought to nourish the liver.
So we’re going for a liver friendly triple green salad. Dark green baby spinach, creamy green avocado, and a zesty green lime dressing. Mmmmm!
Triple Green Liver Friendly Salad
1 bag of baby spinach
1 ripe avocado
1 lime
zest of 1 lime
1/4 cup olive oil
1 tsp maple syrup
pinch of salt
freshly ground pepper to taste
-Toss baby spinach and sliced avocado into a medium sized bowl.
-Place the zest of 1 lime into a small container, add the juice of that lime, olive oil, maple syrup, salt & pepper. Shake until emulsified.
-Pour dressing on salad, toss and enjoy. This is a wonderfully quick salad to eat as a light lunch with some Glutenull Buckwheat Bread and hummus spread. So yummy, healthy, and delicious!
